| | Pumpkin Bar RecipeTired of serving pumpkin pie ? To full after a big holiday dinner? Give these pumpkin bars a try. They are quick to make and will disappear even quicker. Just the perfect size dessert after a huge meal. Ingredients: 1-1/3 cups flour 3/4 cup granulated sugar 1/2 cup packed brown sugar 3/4 cup cold butter or margarine 1 cup old-fashioned or quick-cooking oats, do not cook 1/2 cup chopped pecans 1 8 oz.package softened cream cheese 3 eggs 1 15 oz can pumpkin 1 Tbsp. pumpkin pie spice Instructions: Heat oven to 350 Take a 13 x 9 inch pan and line it with foil extending the foil over the sides then grease the foil. To make your crumb mixture. Use a medium size bowl and mix together the flour, 1/4 cup sugar and brown sugar. Cut in butter with pastry blender or 2 knives until mixture is crumbs. Next add your oats and pecans and stir in. Set aside 1 cup oat mixture; take the remaining mixture and press evenly on bottom of your pan and bake for 15 minutes. While your crust in baking: Beat cream cheese, remaining sugar, eggs, pumpkin and spice with mixer until well blended. Pour this mixture over crust then sprinkle with your 1 cup you have left of your crumb mixture. BAKE for approximately 25 minutes. Let your pumpkin bar cool 10 minutes then using the foil transfer them to a wire rack to finish cooling before cutting. Depending on the size you cut them, you should get about 24 bars.
